Burritos

November 11, 2016

Happy Friday! Today we are travelling all the way from Norway to Mexico. Well, not physically but in our minds by making a nice Mexican dish made for Norwegian people. The Norwegians just love their tacos which is eaten every Friday and also prepare tacos as a start on the weekend. Today we wanted to try something different but still keep our Mexican Friday food and therefore we decided to make burritos. The word comes from burro which means donkey or stupid in both Spanish and Portuguese which is quite funny.

Ingredients:

Chicken

Avocado to make to guacamole

Salsa

Cheese

Spice mix

Sour creme

Tortilla

Salad

The dish is prepared very quickly and it is perfect if you are in a hurry or if you’re very hungry and need food right away. Today we were really hungry and a bit lazy and therefor it was very convenient to make something fast which we did and it was very tasteful. I must admit though that Johan is tougher when it comes to spicy food than I am. My tongue was burning haha.

This is how it is done. Fry chicken in a pan for 1 minute and add spice mix and salsa to it. Put the tortilla in the oven for a couple of minutes. Put the chicken on the tortilla and add guacamole, cheese, salad,  salsa and sour creme to it. Roll the edges in and roll the other sides as you can see on the picture. Use a knife to cut it into two pieces.

We too eat burritos regularly. So many ways to prepare, but always fun to eat. In my house, I always had finger food night (fridays) you guessed it, this was a winner, usually followed by something silly like jello try eating jello with fingers haha, one time the kids could get messy no complaints lol

When I was first stationed at Bitburg AB in Germany, there was a Mexican restaurant, owned by an Englishmen, outside the gate. Mexican food is taking over the world. However, the food from that restaurant was not good not very Mexican.
